A MySql keyword searching system

I am building a search system for my website and I need to search all the products listed in a table to see if they are relevant to the users query. I don't understand MATCH() AGAINST and I don't want to use LIKE as they won't know exactly the tags that are in the table. Surely this has been done before, but I can't find it anywhere.
