Where the deleted files stored in windows?

When I permanently delete a file, where that file stored? When I use a recovery software then it come back to computer. My another curiosity is that, when we work with MSWord,Power Point etc, sometimes we delete lines or pictures etc. But when we press Ctrl+Z then it come back. But how it's actually working internally? Please give me details description.
