Remove 3 standard deviations either side of Histogram peak value in Matlab?

Lets say I have image X, I'm looking to remove 3 standard deviations either side of the peak value (mode) in it's histogram. I have attached a histogram that could represent X as an example http://ift.tt/1Hx6i0w
